As the weather cools off, the bivalve and shellfish season starts to flourish. These filter feeders are best eaten during the cold months when bacteria levels in their native waters drop to safe levels. I'm not sure whether the R-rule ("Shellfish and bivalves should only be eaten in the months who's name contain the letter 'r' ") is a steadfast rule, guideline or wives' tale. I do know that the selection at your local fish market will increase as the winter and spring seasons approach. Celebrating the holidays with friends is one of the highlights of the winter season. The problem is finding a menu which sufficiently indulges the senses without taxing your over-burdened schedule.
