A Meatloaf for all seasons

I bought some ground turkey recently. I don't often do this. I usually can't think of anything fun for dinner that starts with ground turkey. It happened this time as well. The package sat there at the bottom of my fridge for two days before I got serious about finding something great to do with it.

So, I went to the Epicurious Recipe File and searched for ground turkey. There were lots of options. But one recipe sounded healthy, and traditional, yet spicy and tasty as well.

Turkey and Zucchini Meatloaf. It has an incredible peach and mustard glaze. I added about a tablespoon of hot sauce to the glaze to give it a kick! I had not really expected to like this meatloaf. But, I did. It was moist and flavorful. The glaze made a tangy contrast to the tasty meatloaf. The leftovers were great too - wrapped in tortillas with a little Melinda's Hot Sauce.Awesome.

The ground turkey recipe list at Epicurious kept me thinking, about ground turkey. I was actually quite impressed with the list. Lot's of ideas there. Well anyway, it inspired me.

I began thinking of other herbs and spices I could add to this basic and very low-fat protein source to create a few really great low-fat and tasty dinners.

For instance, Italian Meatloaf Primavera. I would use basil, garlic, diced tomatoes, green onions and zucchini. Served over some polenta or buttered rigatoni. Maybe some garlicky spinach on the side?

Or perhaps a rich and hearty version for the winter. I could see using lots of assorted mushrooms, onions, shallots, leeks, garlic, parsley. Make a red wine sauce with the pan drippings, serve with mashed potatoes. Now you're talking!

How about Puttanesca Meatloaf? Add capers, olives, diced tomatoes, onions, and anchovies. Rich balsamic-tomato sauce over the top. Serve it over buttered shells in a bowl with a few Parmesan shavings. MMM, good!

These ideas reminded me of a great tarragon shallot turkey burger recipe I used to have which was quite good! They were stuffed with a chunk of gruyere cheese. Wonderful.

Am I getting carried away? What about Greek? Mexican? Moroccan? Oh, the possibilities!
