3 Tblsp. melted shortening
1 1/2 cups milk
3 eggs, separated
Mix the cornmeal with boiling water and beat until smooth. Add salt, shortening, milk, and egg yolks. Beat the egg whites until stiff but not dry, and fold them in. Pour into a well-greased baking dish and bake in a 350 degree oven for 45-minutes. Remove from dish with a spoon, and enjoy it with your crab stew on July the Fourth and otherwise!
Sometimes I will add macaroni instead of potatoes, to my crab stew. I love macaroni, and I am not alone. Thomas Jefferson reportedly idolized macaroni after he discovered it in Paris - and he served it frequently to other Americans after he returned home.
Our Revolutionary soldiers also enjoyed macaroni, but their knowledge of it came through contact with the French Army. English soldiers made fun of the American-French contact with a derogatory litte ditty about a country bumpkin who went to war "a-riding on his pony." But the Revolutionary soldiers picked up the tune and sang it proudly! "Yankee-Doodle" stuck a feather in his cap, and thus became the hero of the American Revolution!
At the Executive Mansion Reception in Philadelphia,July 4, 1776, John Adams said to his wife, Abigail:
"This day will be celebrated by succeeding generations as the great anniversary festival. It ought to be solemnized with pomp and parade, with shows, games, sports, guns, bells, bonfires, and illuminations from one end of this continent to the other, from this time forward forevermore."
