The Dairy Industry

Milk is still one of my favourite drinks. I don't consume it as much as I used to; in fact most of the time, I only use it on cereal with the occasional glass late at night. I find myself drifting, since I became a vegetarian, to alternatives such as rice and soy milk. There are times when I prefer to use apple juice on my cereal and just recently I discovered goats' milk, which has a deep, rich texture.

However, a tall glass of cold cows' milk is the only drink that goes with toast and peanut butter. Obviously, the Jersey is not the only breed of dairy cow. Of course, not everyone can safely enjoy milk. A considerable number of people are allergic to cows' milk or are lactose-intolerant.

Allergic reactions and lactose intolerance are not the only concerns when it comes to milk; for vegans, there are ethical reasons as well. Still others are concerned about BST.

The dairy industry goes to considerable length to educate and advocate on behalf of dairyfarmers. There is an extensive information network that people seeking information can access.

The industry is also continually seeking new technologies to improve production efficency and bring the product to market quicker. The jury is still out as to whether or not all of these new technologies will benefit the consumer and the environment. There needs to be more research and public debate around the more controversial ones such as cloning.

Milk is not the only dairy product. There's cheese, butter, cream, ice cream, to name a few. And here's another favourite food - yogurt. I use yogurt, either plain or flavoured, to make a morning power drink. In the blender, put a half cup of yogurt, three ice cubes, a tablespoon of wheat germ, a banana or two, and two cups of soy milk; blend until ice cubes are dissolved. Two glasses of this and I'm happy until lunch time.
