Bread, Part Two.

Last week, I wrote about bread. This week, I want to provide some information about gluten free breads as well as a few gluten free recipes. According to Omega Nutrition "Although gluten flours are commonly favored in yeast breads for their rising abilities, hemp flour can create the same rising action if you simply add guar gum to the recipe.

The alternatives to gluten make it possible for anyone who wishes to avoid gluten in their bread or other baking to do so. I have not found a way to bake bread using a bread machine without using gluten flour. The information from Omega Nutrition about guar gum offers some possibilities so I will purchase some and give it a try. I haven't made bread it using hemp flour but I plan to substitute one cup of white flour for one cup of hemp flour in a future baking. I will see what this turns out like and then begin to experiment.

It is the experimentation, the trying new ideas and ingredients that makes cooking and baking exciting. I enjoy cooking even when it is a tried and true recipe but I get a real kick out finding something new, especially if it is healthy and economical, at the same time. Next week, a look at pasta, another magical food.

Well as mentioned last week, my favourite bread, well one of them at least:

Multigrain Bread

11 oz. cold water, 2 tbsp margerine, 1 cup white flour, 1 1/2 cups whole wheat flour, 1/2 cup seven grain cereal (to which flax seed has been mixed in), 1 tablespoon wheat gluten, 1 tablespoon powdered milk, 2 tablespoons brown sugar, 1 1/2 teaspoons sea salt, 2 1/2 teaspoons bread machine yeast,

Set on "French bread" cycle.

This recipe makes a 1 ½ lb loaf in my Sunbeam bread machine. This is the first time that I have included a detailed recipe in an article. It will not become a habit but this week it simply felt like the right thing to do. Food was meant to be shared and the exchange of recipes and our experiences with cooking are an excellent way to share food with people you only meet in cyberspace.

Hi Bob,

These last two are making my mouth water! Mmmm! :)

I've tried the hemp bread and it was good, but had that 'green' taste to it. I found I liked it much better heated with some yummy jam ...
