I eat less pizza now than I did 15 years ago, but there are times when it is the only food that I need. I still remember the first time I saw pizza. I was 12.
I grew up in the City of Etobicoke. Qhen we moved in, it was known as Alderwood, after the black alder tree, which grew everywhere until the area was zoned for suburban development. It was one of the first developments on the outskirts of Toronto and in order to accomodate the soon-to-come houses and industries, the woods were cut and the wetlands filled in. Anyway, back to the pizza. The houses arrived slowly and when the first strip mall was built it contained a pizza palour. One Saturday night instead of our usual hot dog and hamburger meal - I was not yet a vegetarian - my mother decided to get a pizza. When it arrived I took one look at it and promptly asked if I could make a sandwich, peanut butter, of course. A lots has changed since then. Literally thousands of pizzas, in a variety of combinations, have been devoured. I have several favourite combinations, hot peppers and tomatos are one that my partner particularly enjoys. Forunately the 2-4-1 syndrome is dominating the pizza industry here so even though I suspect the sizes may have gotten smaller, we rarely debate the ingredients. I like a thick crust and deep red sauce. The first and most important ingredient after the crust and sauce is the mozzarella cheese. This provides the texture and intensifies the flavour. The next ingredient is onions, followed by that versatile vegetable, the green pepper and last but certainly not least, pineapple. Well, once again, I've made myself hungry.
