Carrots, Winter's Delight.

We are in the deep part of Winter, bright sunny days, clear star filled nights with temperatures that run between -18 and -42 Celsius. Little snow falls during this period and that is just as well, we've got enough now to provide ground cover for our gardens and keep the forest fires in check.

The food supplies, the alleged fresh vegetables, that is, are getting a little dingy looking. I've switched to canned and frozen fruit because the fresh, spoils within a 24 hour period once it finally makes it to the table. Next year we are going to have to put more preserves up so I can avoid buying the tin and frozen versions which while tasty don't have the crisp sweetness of the fresh counterparts.

If you are looking to keep your family in fresh food long into our northern winter season, give carrots a chance. The carrot is relatively easy to grow and , in many areas, can be sown in late July or August for fall harvest and with a little care they can be left in the ground long past the first frost. That's right, you can actually store carrot in your garden, ideal if you don't have a root cellar or cool basement. This means you can provide your family with fresh food, even in December.

And December is when you need the nutrient value that this orange delight brings to your table and you don't have to go to the supermarket and purchase the wooden substitutes they sell during the winter season. Unless you have an organic grower in your vicinity, this is the best way to help keep your family well feed all winter long.

Carrots are very versatile. I like them raw best, either just as they are or diced in salads. They are great in stir fries, soups and stews and I even like the occasional glass of carrot juice, especially mixed with celery juice, very invigorating. Now, of course, a most excellent way to serve carrots is with coffe in a carrot cake. The beauty of carrot cake is that you can make it to suit those who demand ,a href="http://wral-tv.com/features/remakes/1997...">non-fat foods and for those who don't.

So no matter how you and your family enjoy carrots, do yourself a favour, buy a pack of seeds and plant a few rows, you be grateful you did on a cold, dark December morning.
