A Salute to the PotatoIt's been snowing off and on for the past three days, with a major blizzard last weekend. What a change a few days make. A week ago, it seemed as if spring might be near and that we weren't going to get our normal February weather. Now, here we are deep into a pretty typical winter month, and even though it has fewer days, one of the longest, as hope for an early Spring fades. This is the time of year, when all fresh fruit and vegetables are in short supply locally, and even that year-round favourite, the potato, must be shipped in from other regions. There are still a few bags of regionally grown spuds on the shelves but they are looking and tasting old. Potatoes come in a large variety of colours and sizes and, besides being tasty and nutritous, are used in many ways from french fries and potato salad to mashed and potato chips. I'm a big fan of baked potatoes covered in a vegetarian chilli or with hot sauce. In the remote island of Tristan da Cunha, potatoes are highly valued and have even served as a medium of exhange or currency. Many of us know that the potato has traditonal connections to Ireland but are we aware that they are also enjoyed in the Netherlands, New Zealand and Scotland as well? If you are looking to increase your ability to be self-reliant, consider growing a crop. Potatoes can be even be grown on your patio or balcony in a garbage can.
