Bean Burrito Recipe
Ingredients:
1/2 cup Taco Bell refried beans (1 pt.)
2, 6" white flour tortilla shells (2 pts. each)
4 TBSP shredded cheddar cheese (3 pts.)
Hot sauce (0 pts.)
Directions:
Divide the half cup of beans between 2 tortilla shells. Add 2 TBSP shredded cheddar cheese to each tortilla shell. Spread hot sauce on each burrito and roll. Spread a little sauce on outside of each shell. Bake approximately 25 minutes or until hot and shells are a little crispy.
Total points for 2 burritos, 8 points.
Barbecued Pork (4 pts)
One of my favorites!!
Makes 8 servings at 4 pts. each
Ingredients:
2 lbs boneless pork top loin
1 c. chopped onion (I used chopped garlic and not a whole cup)
3/4 c. diet soda (I used pepsi one)
3/4 c. barbecue sauce
Directions:
Combine all ingredients in a crockpot. Cook covered on high for 5-6 hours or until meat is very tender. Drain and slice or shred pork. Serve it on wheat buns that are 2 pts.

Pumpkin Fluff
Makes a great dessert for fall!
Serving Size : 5 (1-cup servings) / 1.5 points
Sometimes I will also increase the milk to 3 cups. It doesn't alter the points per serving as it then yields approximately six 1-cup servings. This way you are getting 1/2 cup milk per serving which means you can not only count this as a serving of veggies (due to the pumpkin), but you can also count it as 1/2 serving of milk as well.
1 can canned pumpkin, large can -- not pie filling
1 pkg pudding mix, Jell-O Sugar-free Fat-Free instant, butterscotch
1 pkg pudding mix, Jell-O Sugar-Free Fat-Free instant, vanilla
2 c skim milk
1 tsp (or as desired) pumpkin pie spice
Mix milk and pudding with hand mixer. Add pumpkin and spice. Chill.
Chicken Stroganoff - 4 pts. per serving
Makes 6 servings
Ingredients:
1 pound frozen boneless skinless chicken breasts
1 can fat free cream of mushroom soup
16 oz. carton fat free sour cream
1 envelope dry onion soup mix
Directions:
Put frozen chicken in bottom of crockpot. Mix soup, sour cream, onion soup mix and pour over chicken. Cook on low for 7 hours. Serve it over rise or noodles, but be sure to add those points).
