Quick Nutritious Family Suppers

September often brings a hustle and bustle to families, busy with school, work, extracurricular activities, social events, and the day-to-day routine of late 20th century life. Making sure you all enjoy a nutritious but quick and easy supper can help ease your family into evening, leaving you less frazzled and rushed, with more time for peace and quiet before bedtime.

This week, we will focus on some tried and tested recipes, geared to help your family relax and feel nourished at the end of a hectic day. As well, further links that will steer you towards other recipes are included for your family's dining pleasure.

Quick Recipes to Feed Hungry Families

Zesty Tortilla Pie (20 minutes to make)

Serves 4

Ingredients

1 12 ounce jar of medium or mild salsa
1 8 ounce can of tomato sauce
1 16 ounce can black beans
1 15 ounce can whole kernel corn
3 green onions
4 10 inch tortillas
6 ounces Monterey or Cheddar cheese
Sour cream for topping

Instructions:

1. Preheat oven to 500 degrees F.
2. Grease or spray a 15 by 10 inch jelly roll pan.
3. Mix together the salsa and tomato sauce in a small bowl.
4. Mix the black beans, corn, and green onions in another bowl.
5. Place 1 tortilla on the bottom of the pan.
6. Spread 1/3 of the salsa mixture over the tortilla. Top with 1/3 of the bean mixture, then 1/3 of the shredded cheese. Repeat this layering two more times, ending with the fourth tortilla.
7. Bake the pie for 10 to 12 minutes, until the cheese is melted and the filling is heated.
8. Serve with sour cream topping and a side salad for a quick and nutritious supper.

Rice and Chicken Morsel (30 minutes to make)

Ingredients

1 pound boneless, skinless chicken breast, cut into thin strips
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 cups long grain white rice
2 cups chicken broth
1 small onion, coarsely chopped
3 cloves garlic, minced
1/2 cup coarsely chopped green bell pepper

Instructions

1. Place the chicken strips in a medium-sized bowl, and sprinkle with the paprika, salt, and black pepper. Stir to coat.
2. Place the broth in a large pot, and bring to a boil over high heat. Add the chicken, onion, garlic and rice. Stir the ingredients, reduce the heat to low and cover. Simmer for 15 minutes.
