Thankfully easy recipes

You will need:
Two pounds baking potatoes, peeled and quartered
Two tablespoons of butter
One cup milk
Salt and pepper to taste

Bring your butter to room temperature. First, bring a pot of lightly salted water to a boil. Add your potatoes and cook them until they are tender -- but still somewhat firm when poked with a fork; drain. Using a potato masher, slowly smash milk and softened butter into potatoes until smooth and creamy, or chunky and lumpy – whichever your family prefers. Season with salt and pepper to taste.

Irish Cream
This is a great after-dinner treat. Linger at the table and “pick” at the leftovers while chatting and sipping this wonderful drink…and let the guys and kids head into the living room to watch football and nap! Oh, and you can make this yummy drink today and then just serve it on the holiday!

You will need:
One cup heavy whipping cream
One can sweetened condensed milk
1 2/3 cups whiskey, preferably Irish!
One teaspoon instant coffee (granules)
Two tablespoons chocolate syrup
One teaspoon vanilla

Combine cream, sweetened condensed milk, whiskey, instant coffee and chocolate syrup in a blender. Once those ingredients are mixed well, add vanilla extract. Blend for half a minute on high. Store in tightly-sealed, plastic container (not metal!) and refrigerate. Shake well before serving and top with whipped cream.
