Home Canning - How To Use A Dial Guage Pressure Canner.© Vic Ferri
Last month we discussed the basics of home canning and it was stated that you should carefully follow the operation instructions that came with your pressure cooker. But what if you have a used pressure canner that doesn't include any instructions? Many of you probably do so this month I will give you the basic operating steps for the typical dial guage pressure canner.
Before beginning you should ensure that your canner is in good working condition. The main thing to check is the lid. Make sure it fits and locks well. Some canners use a gasket seal and and the lid is twisted on. Canner lids not using a gasket usually have a metal to metal seal and the lid is fitted on(no twisting required) If your canner lid has a gasket, make sure it is not dried up or brittle. It should be pliable and well fitting in the groove around the lid. Some gaskets are reversible so you may want to try reversing it. This may make for a better seal. Step by Step Operation Guide 1. Place the rack in the bottom of the pressure cooker. 2. Add three inches of water in bottom of the pressure cooker. 3. Place your filled jars on the rack but do not let them touch one another(you want the steam to be able to flow freely around the jars) If you have more jars that can fit on the bottom, you can create a second layer by placing another rack over the first row. 4. Place the lid on the canner and make sure it is secured well. 5. Turn on the heat to high and leave the vent open for ten minutes so that air can be driven out as the steam begins to form and so that the proper pressure will be reached. 6. After ten minutes close the steaming vent and begin watching the dial guage as the pressure builds. Build and hold the pressure until the needle is half a pound below the desired poundage. Then reduce the heat to the temperature called for in your recipe. Never open the vent at any time in an attempt to reduce pressure. If the pressure varies and rises somewhat, not to worry, this is normal. 7. Once the recipe processing time is completed, remove the cooker from the stove and place it on a solid surface - on bricks or stones would be good or just on the floor or counter top if you must.
