The Slow Cooker Is The Eclectic Homemaker's Friend


One of our favorite dishes around here is Beef Stroganoff. My Mother-In-Law gave me a recipe that was easier than most I've found and then I tweaked it a bit. Believe it or not, it's even easier now. Here is the recipe:

Beef Stroganoof - Eclectic Homemaker Style

  • 1.5 to 2 pounds stew meat
  • 1/2 tsp salt
  • 3/4 cup chopped onion (I buy these diced and frozen)
  • 1 clove garlic
  • 2/3 cup low fat sour cream
  • 1 small can mushrooms stems and pieces
  • 1 can cream of mushroom soup
  • 1/2 soup can of water

Brown your stew meat, garlic and onions in a skillet with as little oil as possible. Drain and rinse browned meat and onions. Put can of mushrooms, cream of mushroom soup and 1/2 can of water in slow cooker. Add meat mixture and stir thoroughly. Cook on low heat about 5-6 hours or until stew meat is cooked all the way through.

Just before serving stir in sour cream.

My family loves this over mashed potatoes but cooked noodles will do in a pinch.
