Millennium MunchiesThere are so many good recipes available, it's hard to pinpoint those that are great. Below are some of my favorite "snack" recipes, I hope you, and your family, enjoy them during this new millennium year. Betty's Mix it up 1 package of fresh shelled pecans, halved 1 package of fresh macadamia nuts, halved 1 package of fresh honey roasted peanuts 1 package of fresh, whole, roasted cashews 3 king size packages of plain M & M's 2 medium packages of yogurt covered raisins 1 package of roasted, whole, almonds Toss all ingredients into a large container, cover, shake and m ix together all ingredients, and get ready for some chow time fun. Twist and Shout 1 medium lemon 1/2 medium lime 1 orange 2 c. 1 % milk 2 c. plain yougurt 2 c. sugar free ice cream Peel and remove seeds from all citrus. Slice into sections of 6 pieces. Add milk, fruit, yogurt, and sugar free ice cream into blender and blend for 2 minutes. This is a healthy, delicious breakfast treat that can be enjoyed any time of the day! And, last, but never least, French Toasted Applesauce 3 slices of bread, any kind, with crust removed 2 eggs, beaten 1 c. applesauce, chunky 1 c. 1 % milk 1 tbs butter / 1 tbs syrup (optional) Mix eggs, milk and applesauce in a large mixing bowl. Place 1 tbs of butter, or cooking spray, into large skillet. Coat both sides of the bread, generously, with the egg mixture, letting the liquid soak for a few seconds. Place bread into heated skillet, browing both sides evenly. Top with syrup, if desired. Add the shake and the toast together and that is one good breakfast in bed idea!
