This one is really easy. Mix together all ingredients except the chicken. Place the chicken in a shallow glass dish. Coat the chicken with the mixture. Toss the chicken a little to ensure it's properly coated. Grill the chicken over a medium high heat for 5-7 minutes per side.
Ingredients
8 ounces of uncooked spaghetti
1 pound of asparagus tips
2 chopped garlic cloves
1 chopped yellow bell pepper
1 medium chopped Spanish onion
2 cups of chicken broth
1 1/2 pounds of chicken meat
1 cup of ricotta cheese
2 tbsp of basil
2 tbsp of sour cream
1/2 tsp of salt
1/2 tsp of pepper
Method
Cut the chicken into 1 inch cubes. Cook and drain the spaghetti. Combine the asparagus, garlic, bell pepper, onion and broth in a large sauce pan. Stir in chicken after 5 minutes. Continue cooking until chicken is completely cooked. Mix in all remaining ingredients, with the spaghetti and toss, still over the heat for 2 minutes.
These are the simplest and easies dishes I've made to date with chicken.
You could try using other meats like pork and turkey as substitutes and see what happens. In fact, I made the Spring Chicken Pasta dish using minced lamb instead of chicken for an equally tasty meal. It only took a little while longer to cook.
