Fruity Summer


Here are some great fruit recipes using peaches. They are simple to make and really tasty.. Also, I've listed some sites that have more on peach than a peach tree!

Cranberry and Peach Relish

Ingredients

1 16 oz can peaches in juice - undrained
1/2 cup firmly packed brown sugar
1/4 teaspoon ground allspice
1 12 oz bag cranberries

Method

Pulse peaches and juice in food processor just until coarsely chopped. Add sugar and allspice to peaches, bring to boil over medium heat. Stir frequently, cook 2 minutes.

Add cranberries, reduce heat. Simmer 12 minutes or until cranberry skins pop and mixture thickens, stirring occasionally. Remove from heat and cool. Store in airtight container in refrigerator up to 1 week.

Personally, I thought this was a bit of work for just a relish, but it's quite good really!

Old Fashioned Peach Cobbler

Ingredients

1/2 cup Light-brown sugar (packed)
1/2 teaspoon Cinnamon -- ground
1 teaspoon Grated lemon rind
1 tablespoon Lemon juice
4 cups Sliced peeled peaches
3/4 cup All-purpose flour
1/2 cup Whole-wheat flour
1 tablespoon Baking powder
1/4 cup Butter (1/2 stick)
2 nos. Egg whites -- beaten
1/2 cup Milk
1/2 teaspoon Vanilla

Method

Preheat oven to 375 deg.F.

Lightly grease a 12-inch baking dish.

1>. Combine brown sugar, cinnamon, lemon rind and juice in a large bowl. Add peaches; toss to mix. Transfer to prepared baking dish.

2>. Combine flours and baking powder on a piece of waxed paper. Beat together butter and sugar in a medium-sized bowl until light and fluffy. Beat in egg white. Add dry ingredients alternately with milk and vanilla, stirring just to combine. Drop batter by spoonfuls over peach mixture; Spread gently.

3>. Bake in preheated 375 deg. F oven for 25 to 30 minutes or until peaches are tender and crust is golden brown.

Serve warm.

This recipe was difficult in terms of preparation, but worth the effort when I cleaned out the whole cobbler single-handedly!

Peach Shakes

Ingredients

2 cups frozen peaches, partially thawed
1/2 cup cold milk

Place peaches in a blender and add milk. Blend till thick and smooth. Serve.

Whoa...a difficult one! Add vanilla ice-cream to make it even more delicious and be sure to make a lot of it. The recipe above, makes only two tall glasses!
