Summer Barbeques


Summer is categorized by barbeques. If it's summer, you've got to have one. Here's how to prepare a full barbeque meal wit meat, vegetables and a great potato salad.

Barbequed Chicken

Ingredients

1 chicken cut into six large pieces
60 gm. ginger garlic paste
30 gm. red chilly powder
salt to taste
1 tbsp. vinegar
1 tbsp. soya sauce
1 tbsp. fish sauce
150 ml. yoghurt (plain)

Method

Since the chicken pieces are big, make small, but deep knicks in the flesh of the chicken pieces.

Wash the chicken pieces. In a large bowl, add the yoghurt. Place the chicken pices in te yoghurt. With your hands, apply the ginger-garlic paste to the chicken. Marinate it in the yoghurt. Add thhe fish and soya sauce, vinegar, salt and a little pepper. Make sure that the chicken is completely marinated in the sauces. Let the chicken sit in the marinade for about four hours.

Lightly oil the chicken with a brush and microwave evenly for about 7-10 minutes making sure to turn the pieces over half-way.

Barbeque the pieces on a charcoal grill. If you have small boneless meat pieces skewer them with baby tomatoes, green peppers and pineapple slices.

Salad a la Barbeque

Ingredients

1 shredded cabbage
4 tomatoes sliced
4 cucumbers sliced
1 cup mayonnaise
salt and pepper

Method

Toss all the ingredients in a large bowl. Experiment with different dressings like Thousand Island's sauce or Italian dressing. Chill in the freezer.

With this, make sure you have lots of chilled soda and mashed potatoes in barbeque sauce. Happy spit-firin'.
