A friend of mine directed me to this site called Marla's Cheap and Easy Recipes when she heard I was writing this kind of stuff. I prefer to receive links to such sites rather than the large, commercial, big-name sites that everyone tends to look out for. The reason for this is such sites tucked away in a corner of the Web have a personal warmth to them and are difficult to find just surfing around!

Hamburger Rice Hot Dish

Ingredients

1 pound ground beef
1 cup water
1 can cream of chicken soup
1 cup uncooked rice

Method

In a skillet, brown ground beef, drain. Add remaining ingrediants. Stir to combine. Spoon into a 1-1/2 qt. casserole dish. Cover and bake at 325 degrees for 50-60 minutes.

Sour Cream Chili Bake

Ingredients

1 lbs. ground beef
15 oz. can chili beans
8 oz. tomato sauce
6 oz. shredded cheddar cheese
2 cups corn chips (divided)
16 oz. pinto beans, drained
10 oz. enchilada sauce
1 tsp. chili powder
1 tbsp. minced onion
8 oz. sour cream

Method

In a skillet, brown ground beef; drain. Stir in beans, enchilada sauce, tomato sauce, chili powder, 1 cup cheese, onion and 1 cup corn chips. Pour into a 2 qt. casserole dish. Cover and bake at 375 degrees for 30 minutes. Remove from oven and spoon sour cream over casserole. Sprinkle with remaining cheese and 1 cup corn chips. Return to oven for 2-3 minutes or until cheese is melted.

Big Match Special Sauce for Burgers

Ingredients

1 cup Miracle Whip
1/4 cup sweet pickle relish
1/3 cup creamy french dressing (the orange kind)
1 tbsp. sugar
1/4 tsp. black pepper
1 tsp. minced onion

Method

Blend all the ingrediants with a fork. Keep covered and refrigerated. Use within a month.

Roast Beef Burritos

Ingredients

Oil
1 clove garlic, minced
1 small onion, chopped
4 cups roast beef, shredded
4-5 tomatoes, diced
1-6oz. can green chili peppers
1/2 tsp. cumin
1-8oz. can taco sauce
1 pkg. flour tortillas
1-8oz. enchilada sauce
1 cup shredded cheddar cheese

Method

In a skillet heat small amount of oil and saute the garlic and onion until tender, add the beef, tomatoes, chili peppers, cumin, and taco sauce. Simmer for at least 1 hour. If desired, the dish may be thickened by adding cornstarch or a mixture of 1/4 cup flour and 1 cup cold water. Heat the tortillas, spoon the meat onto the tortillas and roll up. Heat the enchilada sauce and the cheese. Stir constantly until the cheese is melted. Watch close, to prevent the cheese from sticking to the pan. Spoon the red sauce onto the burritos and enjoy!
