The Site; The Recipe - A Review


I thought that this week, a new approach was in order considering that I don't really provide heaps of links within the article like many of my CE friends do. And I've seen that this does seem to make the surfer's work much easier.

So what I've put up this week is a bunch of links to new sites and my favorite recipe from that site. It's been loads of work, but it's been great fun trying out some of the stuff, and even more fun visiting the sites!

Five-Cheese Chicken Breasts

4 large chicken breasts
4 thin slices swiss and mozzarella cheese
1/2 cup ricotta cheese
1 Tbsp parmesan cheese
1 egg yolk
Flour
1 egg, well beaten
1/4 to 1/3 cup dry bread crumbs

Flatten the chicken breasts between plastic wrap with mallet. On each breast place a slice of mozzarella and swiss cheese. Mix ricotta and parmesan with egg yolk, place spoonful at wide end of breast. Roll up breast and secure with toothpicks. Roll each in flour and egg, and coat with crumbs. Brown breasts in oil and butter. Arrange in shallow baking dish. Bake at 350 F for 20 min. Cover with cheddar cheese sauce.

Cheddar Cheese Sauce
Melt 2 tablespoons butter. Stir in 2 tablespoons flour. Add 1 1/4 cup milk and cook, stirring, until thickened. Stir in 1/2 teaspoons Worcestershire sauce, 2 tablespoons dry sherry, and 1 cup shredded cheddar cheese.

Ease: Not very easy, but worth it! Once you have the ingredients in order, it cooks in a flash!

Tangy Meat Nuggets

1 (12-ounce) package frozen breaded chicken nuggets
1 cup water
1 cup uncooked instant rice
1 (16-ounce) can apricot halves, drained
1 (6-ounce) package frozen snow pea pods
1 (11.5-ounce) bottle sweet-and-sour sauce
Cook chicken according to package directions. Set aside. Bring 1 cup water to a boil in a small saucepan; add rice. Cover and remove from heat. Let stand 5 minutes.

Combine apricot halves, snow peas, and sweet-and-sour sauce in a medium saucepan, and cook over medium heat until thoroughly heated. Stir in chicken nuggets, and serve over rice. Makes 4 servings.

Bonus: For Tangy Shrimp, substitute 1 (12-ounce) package frozen breaded shrimp for chicken nuggets.

Ease: As you can see, the ease of preparation depends on how many of the pre-processed ingredients you actually use versus the freshly prepared ones. Either way, it takes no more than 15 minutes to make this one!
