Party Time!


Having a party? Here are a couple dip recipes from one of my favorite cookbooks – Southern Style Diabetic Cooking. Enjoy!

Black Bean Dip
(8 servings-1/3 cup each)

  • 1 can (15oz) black beans, drained and rinsed
  • 1 small onion, coarsely chopped
  • 1 small bell pepper, coarsely chopped
  • 1 clove garlic, chopped
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. olive oil
  • 1/2 tsp. sugar
  • Fresh ground pepper to taste


Combine all ingredients in a food processor or blender. Process or blend until the beans are coarsely mashed.

Creamy Cucumber Dip
(16 servings-2 Tbsp. each)

  • 2 medium cucumbers, peeled and grated
  • 1 small onion, grated
  • 1 pkg. (8 oz) Neufchatel cheese, softened
  • 2 Tbsp. lite mayonnaise
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. garlic powder
  • 1/2 tsp. lemon juice
  • 1 Tbsp. chopped pimento
  • 3 drops hot pepper sauce


Place the cucumber and onion on paper towels and squeeze until barely moist. Beat the cheese until smooth. Stir in the grated vegetables and remaining ingredients. Chill before serving.
