Valentine's Day Meals

Here's a great way to show your sweetie how much you care; make them breakfast, lunch and dinner on Valentine's Day. Well, I know how hard it can be to find the time to do something like that. Especially when that wonderful day of love falls in the middle of the week. So, if you can't do all three, at least try dinner. He/She will be very impressed.

First, from the pages of Quick Cooking (Jan/Feb 2001) comes a very easy recipe for Applesauce Quesadillas. Great for a light and quick breakfast or brunch, they would go well with extra applesauce or some plain yogurt.

APPLESAUCE QUESADILLAS

  • 4 flour tortillas (7 inches)
  • 2/3 cup unsweetened applesauce
  • 2/3 cup shredded cheddar cheese
  • Cinnamon-Sugar (optional)
  • 1 tablespoon butter or margarine (melted)


Place two tortillas on an ungreased baking sheet. Spread each with applesauce and sprinkle with cheese and cinnamon-sugar, if desired. Top with remaining tortillas and brush tops with butter. Sprinkle with cinnamon-sugar. Bake at 400 degrees for 7-8 minutes or until lightly browned. Cut each into eight wedges. (serving size - 1 wedge)

Nutritional Analysis (prepared with reduced fat cheese, stick margarine and no cinnamon-sugar):
Calories - 38
Fat - 1gm
Cholesterol - 1mg
Sodium - 48mg
Carbs - 5gm
Fiber - trace
Protein - 2gm

1/2 starch


Here's something a bit heartier, again from Quick Cooking (Nov/Dec 99). It's more filling, but still pretty easy to make.

Hash Brown Cheese Omelet

  • 1 medium onion, chopped
  • 1/2 cup chopped green pepper
  • 1 3/4 cups frozen cubed hash brown potatoes, thawed
  • Egg substitute equal to 8 eggs
  • 1/4 cup water
  • 1/8 teaspoon pepper
  • 3 slices light process American cheese


Coat a large skillet with nonstick cooking spray. Sauté onion and green pepper. Add potatoes. Cook and stir over medium heat 5 minutes or until heated through. In a bowl, beat egg substitute, water and pepper. Pour over vegetables. As eggs set, lift edges, letting uncooked portion flow underneath. Just before eggs are completely set, place cheese slices over half of the omelet. Fold the omelet in half and transfer to a warm serving platter. (4 servings)
