Last of December's Sweets


We're going to start off this week's recipes with one from the Nov/Dec 1998 issue of Quick Cooking magazine. It's a quick and easy way to get the taste of Christmas all year 'round.

Eggnog Pudding

  • 2 cups cold skim milk
  • 1 package (3.4 oz) instant sugar-free vanilla pudding mix
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon rum extract


In a bowl, combine all ingredients. Beat for 2 minutes. Spoon into individual serving dishes. (Yields 4 servings - 1/2 cup each.)

Our next recipe is one from this year's Nov/Dec Quick Cooking. I don't usually like raspberries, but the picture of this dessert looks so good, I just may try it.


Chocolate Raspberry Dessert

  • 1 cup low-fat cottage cheese
  • 3/4 cup skim milk
  • 1/3 cup raspberry spreadable fruit
  • 1 package (1.4 oz) instant sugar-free chocolate pudding mix
  • 1 carton (8 oz) light frozen whipped topping, thawed
  • 1 square (1 oz) semisweet chocolate, melted
  • 1/2 cup unsweetened raspberries


In a blender, combine cottage cheese, milk and spreadable fruit. Cover and process until smooth. Add pudding mix and mix well. Pour into a bowl. Fold in whipped topping. Spoon into a 9-inch pie plate. Drizzle with chocolate. Cover and freeze 8 hours or overnight. Let stand at room temperature for 20 minutes before serving. Garnish with raspberries. (8 servings)
