We're going to start off this week's recipes with one from the Nov/Dec 1998 issue of Quick Cooking magazine. It's a quick and easy way to get the taste of Christmas all year 'round. Eggnog Pudding
In a bowl, combine all ingredients. Beat for 2 minutes. Spoon into individual serving dishes. (Yields 4 servings - 1/2 cup each.) I don't usually like raspberries, but the picture of this dessert looks so good, I just may try it. Chocolate Raspberry Dessert
In a blender, combine cottage cheese, milk and spreadable fruit. Cover and process until smooth. Add pudding mix and mix well. Pour into a bowl. Fold in whipped topping. Spoon into a 9-inch pie plate. Drizzle with chocolate. Cover and freeze 8 hours or overnight. Let stand at room temperature for 20 minutes before serving. Garnish with raspberries. (8 servings) Diabetic Exchanges: That's gonna be it for this week. Haven't decided on a theme for next month yet, but I'm thinking about just doing a mixture of different types of recipes each week.
