Fridge Critters


I guess the most effective way to battle Fridge Critters is to be vigilant. Check your refrigerator early and often. Check daily for signs of anarchy. Plan a meal a week around leftovers. Take that baked chicken and turn it into a salad. Put leftover spaghetti sauce on meatloaf with some Parmesan cheese and broil it for a couple of minutes before the situation gets out of hand. Take charge of your refrigerator and show those Critters who the boss is!


Steve's No Leftovers Meatloaf

2 lbs. Ground Chuck
½ cup Seasoned Bread Crumbs
2 eggs
1 small onion, finely diced
1 t. granulated chicken flavored bouillion
1 T. Italian Seasoning or Basil
2 T. Worcestershire Sauce
1 T. Mrs. Dash's Herb and Garlic or Garlic Powder
1 4 oz. can of sliced mushrooms(drained)

In a large bowl place all the ingredients except for the mushrooms and mix well. Add Mushroom and blend into the meat mixture. Place in a meatloaf pan and bake approximately 1 hour at 350 degrees. Drain fat and serve. (My thirteen-year-old son likes the meatloaf with Louisana Hot sauce. The kid has a lot of class!)

Grandma Millie's Corn Fritters
My mom will make these when she has leftover mashed potatoes and corn. Just a word of caution; Instant Mashed Potato is not a concept my Mom is familiar with, so this may not work with those.

3 cups mashed potatoes
1 cup sweet corn
½ cup flour
1 egg
salt and pepper to taste
In a large bowl mix mashed potatoes, corn, egg, and salt and pepper. Slowly add flour until the mixture is fairly stiff.(It may take a a little more than a half cup of flouer.)
Mold into patties and fry in a hot oil in a non-stick pan for about two minutes per side. Drain on paper towels and serve. My brother likes Corn Fritters with ketchup.
