Lemon Ice & Strawberry Intermezzo


A little lemon ice and strawberries can help you bring a little of the summer light to any table, any time of the year.

Try this simple and elegant refresher as an intermezzo or a light dessert.

This recipe will serve 4

It is best to begin the preparation, at least 4 hours in advance of your party. The stirring will prevent the mixture from becoming solid. If you notice it becoming too firm, allow it to stand in the refrigerator and then re-freeze and stir as necessary.

Lemon Ice Ingredients:

2 cups warm water

3/4 cup sugar

1/2 cup fresh squeezed lemon juice

1 teaspoon grated lemon rind

Melt the sugar in the warm water.

Add the lemon juice and the lemon rind and let stand for 5 minutes.

Strain through a fine sieve and pour into a freezing tray.

Freeze the mixture, stirring frequently, until it reaches a firm but mushy consistently.


Additionally you will need:

4-8 strawberries with green caps attached

4 tall champagne goblets

1 split of champagne or sparkling wine.

Note: Expensive champagne is not necessary to this dessert

4 leaves of fresh mint (optional but delightfully alluring)

To assemble the dessert or intermezzo:

Slice each strawberry into a fan by making slits from tip to cap, being careful not to slice completely through.

Spoon 1/4th of the lemon ice into each goblet.

Add the champagne, pouring it slowly down the side of the glass.

Top each serving with a fan or two of the fresh strawberries and a leaf of mint.

Serve immediately as an intermezzo, to cleanse the palette between courses, or as a delightful, even romantic, and refreshing dessert.
