This is the last of my series of egg recipes. I hope you have enjoyed reading them as much as I have writing them. Keep cooking!
Mix all ingredients and pour into well greased 8 inch square pan. Bake at 325 degrees for 25-30 minutes.
Beat eggs. Heat milk and salt. Add eggs and butter to ilk. Do not stir. Put in 2 large roasters. Bake at 350 degrees for 1/2 hour, stir. Bake for another 1/2 hour stir, serve immediately. Note: You can stir in 2 pounds chopped ham after eggs have cooked 1/2 hour.
Beat eggs until light and lemon colored. Add flour, baking powder, salt, cottage cheese, Jack cheese, and melted butter, blending smoothly. Stir in chilies. Pour into well buttered 9 x 13 dish. Bake at 350 degrees for 35 minutes or until top is browned and center firm. Cut into squares. Steam tortillas and put filling square down the center. Spoon salsa over mixture and fold like a burrito.
Cut end off Jalapeno peppers and hollow out. Stuff grated cheese inside peppers. Wrap sausage around peppers covering completely. Dip in egg and roll in Bisquick and Shake 'n' Bake pork. Place armadillo eggs on ungreased cookie sheet. Bake for 25 to 30 minutes at 350 degrees.
Dip tortillas in heated oil and remove quickly. Set tortillas on baking pan to keep warm. In a frying pan, panfry eggs in butter until the whites are set but the yolks still soft. Put a fried egg on each tortilla. Heat salsa and spoon over each egg. Sprinkle grated cheese on top. Slip baking pan under broiler until cheese melts. (Variation: Try adding heated refried beans on the tortillas before topping with eggs, salsa and cheese.) Go To Page: 1 2
