Garbanzo Beans

Garbanzo beans (also known as chick peas) are inexpensive, delicious, and a great source of protein. While they do take a fairly long time to soften in dried form, most groceries carry garbanzos in the canned bean/chili section of the store. While they?re terrific in salads and dips, many people are discovering garbanzos as an interesting sandwich spread. Hummus is a good alternative to the everyday pb&j. Try these!


*Marinated Salad*
Great on picnics and for brown baggers


--MARINADE:--


1 1/2 c. corn oil
1/2 c. wine vinegar
3 tbsp. light corn syrup
2 tsp. seasoned salt
1 tsp. dried basil
1/2 tsp. pepper


--VEGETABLES FOR SALAD:--


1 1/2 c. sliced fresh mushrooms
1 1/2 lb. fresh asparagus, slightly cooked, cut into 2 inch pieces (or 2 pkgs. frozen)
1 (1 lb.) can garbanzo beans, drained
1/2 c. black olives, sliced
1/2 c. green olives, sliced
1 pkg. frozen artichoke hearts, cooked
1 sm. thinly sliced onion
Lettuce leaves
Parsley, chopped

1. Combine marinade ingredients. Add to all vegetables in NON-ALUMINUM bowl. Marinate at least 1 hour, better if marinated overnight. 2. Drain and serve on lettuce leaves. Garnish with parsley.

*Bean Salad* Let this salad marinate overnight for best results


1 (16 oz.) can cut green beans
1 (16 oz.) can cut wax beans
1 (15 1/2 oz.) can garbanzo beans
1 (15 oz.) can kidney beans
1/2 c. chopped green pepper
1/2 c. chopped red onion
1 c. sugar
1 c. cider vinegar
3/4 c. vegetable oil
1 1/2 tsp. salt
1/2 tsp. pepper

Drain canned vegetables; combine with the green pepper and onion; set aside. Combine remaining ingredients; pour over vegetables, mixing well. Cover and marinate in the refrigerator for 24 hours, stirring occasionally. Just before serving, drain well and serve in a lettuce lined salad bowl.


*Hummus*
A terrific sandwich spread or for crackers


2 c. cooked garbanzo beans
1/2 c. bean juice
1 c. sesame tahini
2 minced garlic cloves
2 tbsp. fresh lemon juice

Put all ingredients in blender or food processor until pureed. Place in dish and top with chopped onions and parsley. Serve with pita bread or crackers or vegetables.


*Hummus II*
Hummus is like meatloaf ? everyone has their own recipe


2 tbsp. Tahini
2 c. pureed, cooked garbanzo beans
1 1/2 cloves minced garlic
Juice of 1/2 lemon
1/2 tsp. olive oil
Salt to taste
Parsley
Whole wheat crackers or pita bread

1. Mix Tahini, garbanzo beans, garlic, lemon juice, olive oil and salt into a creamy sauce. 2. Serve in a shallow dish garnished with parsley. **Best served with whole wheat crackers or Middle Eastern pita bread.


*Peppery Garbanzo Dip*
Spicy ? and very good!


1 (15 oz.) can garbanzo beans, drained
1/2 c. plain yogurt
