Great Recipes with Peanut Butter

Peanut butter is a staple. Delicious, popular, cheap, and full of protein. And peanut butter is very useful in the kitchen for savories as well as sweets. When a sauce is lacking a little *something,* try stirring in just a little peanut butter. It will add an intriguing dash of salty and sweet. For more ideas, take a look at the following recipes:


*Peanut Butter Cups*
Easy and festive


1 1/2 c. graham cracker crumbs
1 (1 lb.) box powdered sugar
1 1/2 c. peanut butter
2 sticks margarine
1 pkg. chocolate chips

Mix cracker crumbs with the powdered sugar. Melt peanut butter and 1 1/2 sticks of the margarine together and combine with crumb mixture, making sure to work together well. Spread in a 9 x 13 inch well greased pan packing down hard. Melt 1/2 stick margarine and chocolate chips until smooth. Spread over top of peanut butter mixture. When cooled and set, cut into squares.


*Peanut Butter Blossoms*
Fun and delicious


1 3/4 c. flour
1/2 tsp. salt
1/2 c. peanut butter
1/2 c. brown sugar
2 tbsp. milk
1 tsp. baking soda
1/2 c. shortening
1/2 c. sugar
1 egg, unbeaten
1 tsp. vanilla

Beat well, shape by teaspoons into balls and roll in sugar. Place on ungreased cookie sheet. Bake at 375 degrees for 8 minutes. Remove from oven and place candy kisses on top and press down so that cookie cracks around edges and bake 2 minutes longer.


*No Bake Peanut Butter Cookies*
Great way to introduce cooking


2 3/4 c. confectioners sugar
1/2 c. butter, melted
2 c. peanut butter
Chocolate cake frosting

Stir together first three ingredients until well blended. Press in 9 inch pan. Spread frosting over peanut butter mixture.


*Peanut Butter Creams*
Makes great gifts


1 c. powdered sugar
1/2 c. sweetened condensed milk
1 c. creamy peanut butter
1 pkg. mini chocolate chips
Candy sprinkles or crystals

Combine sugar, milk and peanut butter in a medium mixing bowl. Stir until well blended. Stir in chocolate chips then chill until firm. Shape into 1-inch balls and roll each in sprinkles or crystals. Refrigerate until firm. Yields: about 5 dozen.


*No Bake Cookies*
Easy to make with a microwave


2 c. sugar
1/4 c. cocoa
1/2 c. milk
1/2 c. margarine
1/8 tsp. salt
1/2 c. peanut butter
2 c. uncooked oatmeal
1 tsp. vanilla

In large saucepan, mix sugar and cocoa. Add milk and margarine, bring to a boil and cook 1 minute. Add vanilla, salt, peanut butter and oatmeal. Stir until well mixed. Pour in buttered pie plate. Cool, cut into squares.
