Potato Chip Cookies


Potato chip cookies are a bit of an indulgence, but they do use up the last bit of a bag of chips. And they?re great for stale chips or smashed tail-ends of bags. There are a high variety of different recipes for these little morsels ? so enjoy and eat in good health.


*Potato Chip Cookie #1*


1 c. butter or margarine, softened
1/2 c. sugar
1 3/4 c. flour
3/4 c. coarsely crushed potato chips
1 tsp. vanilla
2/3 c. sifted powdered sugar

Cream butter and sugar beating until light and fluffy. Add flour, potato chips and vanilla. Beat well. Drop by rounded teaspoons onto ungreased cookie sheets. Bake at 350 degrees for 10 to 12 minutes or until edges or lightly browned. Cool 5 minutes on cookie sheet. Then remove to wire rack to cool. When cool roll in powdered sugar.


*Potato Chip Cookie #2*


3/4 c. butter
3/4 c. white sugar
1 c. brown sugar
2 eggs
1 (6 oz.) pkg. butterscotch chips or peanut butter chips
3 tbsp. water
1 tsp. vanilla
2 c. crushed potato chips
2 1/2 c. flour
1 tsp. baking soda

Cream together butter and sugars. Add eggs and water and vanilla. Beat well. Add potato chips and butterscotch or peanut butter chips. Sift flour and soda together. Stir into creamed mixture. Drop by teaspoons on greased cookie sheet and bake for 10-12 minutes at 375.


*Potato Chip Cookie #3*


1 c. light brown sugar
1 c. white sugar
1 c. shortening
2 eggs
2 c. flour
1 tsp. soda
1 c. crushed potato chips
1 tsp. vanilla
2/3 c. chopped nuts

Cream together sugars, shortening and eggs. Add flour, soda, potato chips, vanilla and nuts. Stir until well blended. Roll into balls, place on ungreased cookie sheet, press with fork. Bake at 350 degrees for 10 minutes.


*Potato Chip Cookie #4*


1 c. butter, softened
1/2 c. sugar
1 tsp. vanilla
1 3/4 c. flour
1/2 c. crushed potato chips
1/2 c. chopped pecans

Cream butter, sugar, and vanilla. Add flour, chips, and pecans. Form balls about 1 inch in diameter. Place on ungreased cookie sheet, press down with lightly floured bottom of small glass and bake in 350 degree oven for 12 to 14 minutes until edges are golden.


*Potato Chip Cookie #5*


2 c. brown sugar
1 c. shortening
2 eggs
1 tsp. baking soda
2 c. flour
1 tsp. vanilla
1 c. crushed chips
1 c. chopped nuts (of your choice)

Cream sugar, shortening and eggs together. Mix well. Stir in flour and vanilla. Mix well. Add chips and nuts. Mix well to distribute evenly. Drop by teaspoonful onto ungreased cookie sheet. Bake at 350 degrees for 12 minutes.
