With warmer weather comes the craving the fresh fruit dishes. Fruit in season is a bargain both financially and nutritionally. Vitamins, fiber, and natural sugars wrapped up in a tasty bundle. Kids and adults alike will benefit from eating more fresh fruit. I hope these recipes inspire some new favorites!
*Frozen Chocolate Bananas* Both kids and adults love these low-fat alternatives to ice cream
Melt chocolate, stir until chocolate melts. Remove from heat. Peel banana. Cut banana in half. Push a wooden stick into end of each banana half (popsicle sticks will work). Dip or spread chocolate on all sides of banana halves. Put bananas on waxed paper. Freeze until hard. Wrap in plastic wrap.
Mix all ingredients. Pour into a greased 9X13 pan. Bake at 350 degrees for 45 minutes.
Mix eggs, vegetable oil, sugar. Add vanilla, pecans, raisins, apples. Sift flour, salt, soda. Mix all ingredients together and pour into an 8x12 inch cake pan. Bake at 350 degrees for 45 minutes. Icing: Mix all ingredients and cook (boil) 2 1/2 minutes. Pour over cake.
Combine first five ingredients in top of double boiler, beat at low speed with an electric mixer for 30 seconds. Place over boiling water. Beat constantly at high speed 7 minutes or until stiff peaks form. Remove from heat. Add grapefruit juice and vanilla. Beat 1 to 2 more minutes or until thick enough to spread.
In a saucepan, combine yolks and sugar; cook until thickened, about 5 minutes. Remove from heat and add sherry. Chill. Fold whipped cream into sherry mixture; chill. Slice strawberries in half and just before serving, fold into whipped cream mixture.
