Beef Crockpot Recipes


I have to admit, the slow cooker (commonly called a crockpot) is one of my favorite cooking appliances. Inexpensive to purchase, cheap to run, and nearly effortless use. And during the summer, it keeps the kitchen fairly cool.

A couple of points to remember when using a crockpot: never lift the lid when cooking, always add liquid, and put the foods that will need the longest time to cook on the bottom. I have to admit, it’s difficult to not lift the lid. I’m used to constantly stirring and tasting foods. But you will lose precious steam and heat if you do. Enjoy!


*Mexican Chili*
I love this chili the next day, after all the spices have melded


1 lb. hamburger meat
1/2 lb. hot sausage
1 chopped onion
3/4 c. chopped bell pepper
2/3 c. chopped celery
1 can (16 oz) pinto beans
3 tbsp. chili powder
1 tsp. salt
3 lg. cloves garlic, minced
1 envelope French onion soup mix
1 can (4 oz) chopped green chilies
1 can (16 oz) tomatoes
2 cans (6 oz) tomato sauce
1/2 tsp. sugar
1 tbsp. cayenne
1 tsp. oregano
3/4 tsp. Tabasco sauce
1/2 tsp. cumin
1/2 tsp. onion powder
1 bottle of beer

Brown hamburger meat with onion and garlic and bell pepper and cumin. Brown sausage; remove brown stew meat. Mix all meat. Add soup, tomato sauce, tomatoes and beans (drained). Add jalapenos, chili powder, cayenne, oregano, celery and chili peppers, salt, sugar, Tabasco. Add one bottle of beer. Cook at low heat 4 hours.


*Rich Meatballs*
This recipe may sound odd, but they make great appetizers


4 lbs. ground beef (use very lean)
1 egg, beaten
1 lg. onion, grated
20 saltine crackers, crushed
1 t. pepper
1 (12 oz.) bottle chili sauce
1 (12 oz.) jar grape jelly
2 T. lemon juice

Mix together meat, egg, onion, crackers, pepper. Form into small meatballs. Cook until well browned; drain off any extra fat. Place in the bottom of a crockpot. Combine chili sauce, jelly, and lemon juice. Pour over meatballs and cook on low for 2-4 hours.


*Nacho Dip*
Great party food. Serve with tortilla chips


2 lbs. hamburger
3 jars chunky hot salsa
2 jars med. salsa
1 large bar of Velveeta Mexican jalapeno cheese

Oil the inside of your crockpot lightly. Brown hamburger over medium heat. Drain grease. Combine meat and other ingredients and pour into a crockpot. Cook 2 hours on low.


*Beef Tips in Mushroom Sauce*
This also works well with wild game


2 lbs. beef, cut into 1-inch cubes
1 envelope onion soup mix
1 can (16 oz) cream of mushroom soup
2 c. beef broth
1 green pepper, chopped
