Easy Camp CookingSpring Break and family vacation time are becoming a reality again. For our family, this means weekend camping trips. Nothing fancy, just some tents, a couple of packs of cards, maybe some fishing poles, and lots and lots of fun food. Outdoor cooking is just part of the fun. We always pack some food that needs to be cooked - scrambled eggs or el cheapo hot dogs somehow just taste better when cooked outdoors. But we also include lots of ready to eat food for when kids want to just go on a quick hike or when you're too tired to try and start a fire. If you haven't had a chance to go camping with the family - I recommend you try it. Borrow some equipment and find a camping area that's not too expensive. Just have a fun weekend where people can do whatever they want. Some folks may just want to put their feet up, enjoy the fresh air, and read a stack of books. Others may want to hike to the top of the mountain. Just have fun!
In a medium bowl, mix cereal, sunflower kernels, soy beans, dates and raisins with a wooden spoon. Store in a jar or a plastic container with a tight lid. Makes 2 1/2 cups.
Stir together flour, soda, salt. Set aside. Beat margarine, peanut butter and sugar until creamy. Beat in eggs, milk and vanilla. Stir in flour mixture, then oats, chocolate chips and raisins. Bake in preheated 350 degree oven about 15 minutes or until lightly browned. Makes 42.
Cut hot dogs lengthwise but not completely through. Place a slice of cheese (and green chile) in the hot dog where you have cut them; then close hot dog and put a toothpick in each end to hold dog together. Now put hot dog on a stick and cook over hot coals. Cook until heated all the way through.
