Breakfast on the Go!


Have you noticed how fast food restaurants have added breakfast to their menus? We're rushed in the mornings, commutes can be long, and eating on the road is convenient. But this can be an expensive habit and typically, not the healthiest way to eat. Grocery stores have also gotten into the act, with toaster pastry and breakfast bars. Check out the ingredient list - do you really want to feed this to your family? Some of these bars are little more than low fat candy bars. And once again, this is not the thriftiest option.

Making your own "commuter" food is not difficult and is far more nutritious. Kids love these too. Oh, and a helpful hint. If you feel draggy after work, pack some extra food for a snack. A breakfast bar on the drive home can pick you up and improve your mood until dinner. I personally feel that there would be fewer incidences of road rage if everyone just stopped for a glass of juice and a muffin.


*Oatmeal Raisin Muffins*
These freeze really well, so make a bunch.


3/4 c. milk
1 c. raisins
1/2 c. oil
1 egg
1 c. flour
1/4 t. nutmeg
2 t. cinnamon
3 t. baking powder
1/2 t. salt

Beat together the milk, oil, and eggs. Stir in the raisins. Mix together the rest of the ingredients and blend with the milk mixture. Grease the bottoms only of 12 muffin cups or use muffin liners. Fill the cups 2/3 full with the batter. Bake at 400 deg. for 18-20 minutes.


*Travel Shake*
Instead of your regular java, try filling your travel mug with this nutritious shake.


1 c. vanilla yogurt
1/2 c. orange juice
1/2 banana
1/4 c. frozen strawberries
2 T. wheat germ

Toss all of the ingredients in a blender and puree. Pour in your mug and go!


*Microwave Breakfast Sandwich*
For a low fat version, leave out the egg yolks and use low fat cheese


English muffin
Spray oil (like Pam)
Egg
Slice of cheese

Split and toast the English muffin. Spray a ceramic cereal bowl with oil. Break an egg in the bowl and stir to blend. Cook the egg in the microwave for two minutes. Slide the egg out of the bowl onto one half of the English muffin. Top with cheese and the other half of the muffin.


*Microwave Breakfast Burrito*
I can't believe how easy these are!


Flour tortilla
Spray oil (like Pam)
Egg
Grated cheese
Salsa

Spray a ceramic cereal bowl with oil. Crack an egg into the bowl and mix with a fork. Cook in the microwave for two minutes. Slide the egg onto the tortilla. You may want to cut the egg up a little with your fork. Top with a little grated cheese and salsa, roll up,
