We save all of the tougher cuts of beef for the slow cooker. Eight hours of slow, moist cooking will tenderize shoe leather if need be.
*Creole Beef*
A nice change from stew
2 lb round steak, cut into chunks
1 onion, chopped
2 stalks celery, chopped
1 c. spicy V8 juice
2 t. Worcestershire sauce
1 t. cayenne pepper sauce
1 red bell pepper, sliced
1 green bell pepper, sliced
2 cloves of garlic, mashed
1 pkg (10 oz) frozen okra, defrosted
Layer the steak on the bottom of the cooker and top with the onion, celery, juice, Worcestershire, and pepper sauce. Cook on low for 6-8 hours. Add the peppers, garlic, and okra. Cook on high for 30 minutes. Good with cooked white rice.
*Easy Steak and Gravy*
The kids like to put this together - easy and tasty
2 lb round steak, cut into serving sized pieces
1 pkg onion soup mix
1/4 c. water
1 can(10 oz) cream of mushroom soup
salt and pepper
Salt and pepper both sides of the steaks and lay on the bottom of the slow cooker. Top with the soup mix, water, and soup. Cover and cook on low for 6-8 hours. Serve on top of fresh white bread or with mashed potatoes.
*Flank Steak with Mushroom Sauce*
A bit fancier than many slow cooker recipes
1 lb flank steak
1/4 c. red wine
1 T. teriyaki sauce
1 clove garlic, minced
1 can (10 oz) beef broth
1 T. catsup
2 tsp dijon mustard
1/4 c. chopped onion
2 T. cornstarch
2 T. water
1/4 c. fresh mushrooms, sliced
Lay the steak on the bottom of the slow cooker, top with the wine, teriyaki, garlic, broth, catsup, mustard, and onion. Cook on low for 6-8 hours. In a bowl, mix together the cornstarch and water. Add the cornstarch and mushrooms to the cooker and cook on high for 30 min. Serve with saffron rice or a rice pilaf.

A little sweet and a little sour
1 lb flank steak
1 can (30 oz) fruit cocktail
1 T. oil
1 T. lemon juice
1/4 c. teriyaki sauce
1 t. vinegar
1/4 c. chopped onion
Drain the fruit cocktail, reserving 1/4 c. of the syrup. Mix the syrup with the oil, juice,
