Today it's so easy to pick up a package of cookies at the store. Especially on busy weeks, when you've a million things that you still need to do. And it's too easy to forget how nice freshly baked cookies can be. I had the chance to remember the other day when we visited some friends of ours. Now, their house is not very fancy - the sofa is well-worn and the coffee table is second-hand. But they came out with a pitcher of fresh-squeezed lemonaid and a platter of homemade chocolate chip cookies. What a wonderful way to entertain! We spent the entire afternoon chatting and eating the entire platter of cookies.

Baking cookies is also a great way to spend time with the kids. As a purely "educational" experience it can't be beat - reading, measuring, and using fractions. But don't forget that it's also fun and the results are delicious.

*Super Crunchy Peanut Butter Cookies* Extra peanuts add a great crunch to these cookies


1/2 c. butter, softened
1/2 c. peanut butter, at room temperature
1/2 c. brown sugar
1/2 c. sugar
1 egg
1 t. vanilla
1 3/4 c. flour
1 t. baking soda
1/2 t. salt
1/4 c. peanuts, coarsely chopped

Cream together the butter, peanut butter, and sugars. Stir in the egg and vanilla. Mix in the flour, baking soda, salt until well blended. Stir in the peanuts. Place teaspoon amounts of the dough on greased cookie sheets. Use a fork to press a criss-cross on the top of the cookies. Bake at 375 deg for 10 minutes. (Careful - these burn quickly.)

2/3 c. butter, softened
1 1/2 c. brown sugar
2 eggs
2 1/2 c. flour
1 t. baking soda
2 t. cinnamon
1/2 t. salt
1/2 t. cloves
1/2 t. allspice
3/4 c. chopped pecans
3/4 c. raisins

Beat together the butter and brown sugar. Stir in the eggs. Mix the flour, soda, and spices together then blend into the dough. Stir in the pecans and raisins. Drop by teaspoons onto greased baking sheets. Bake at 375 deg for 8-10 minutes.

*Carrot and Raisin Oatmeal Cookies* Full of healthy items like - you guessed it - carrots, raisins, and oatmeal


1/2 c. butter, softened
1 1/2 c. brown sugar
2 eggs
1 1/2 c. flour
1/3 c. bran cereal
12 t. baking soda
1/2 t. salt
2 t. cinnamon
2 c. rolled oats
1 c. raisins
1 c. shredded carrots

Cream together the butter and brown sugar. Stir in the eggs. Mix together the flour, bran, soda, salt, cinnamon, and oats. Stir the mixture into the dough. Mix in the raisins and carrots. Drop dough by teaspoons onto a greased baking sheet. Bake at 350 deg. for 10
