Baking Mix Pies

"Impossible Pies" those incredibly easy casseroles made popular by Bisquick biscuit mix are still a family favorite. They may not be elegant or gourmet, but they are a boon to busy families, especially if they are on a budget. Premade biscuit mix plus almost any ingredients on hand can be quickly mixed together to make a tasty, non-fussy pie.

*Pepper Pie*
This is a great use for those pepper that are starting to ripen in the garden right about now

1 lb ground beef
1 c. salsa
1/4 c. water
2 c. baking mix
1 T. oil
2 c. cheese, shredded
2 bell peppers, chopped

Brown the ground beef in a heavy skillet. Stir in salsa and 1/4 c. water. Heat to boiling and remove. Mix together the baking mix, 1/3 c. hot water, and the oil until dough forms. Let stand for 5 minutes and press into a greased cookie sheet. Spread beef over the dough and sprinkle with cheese. Top with the peppers. Bake for 15 minutes at 450 deg.

*Italian Pie*
The traditional!

1 lb bulk Italian sausage
1 can (4 oz) sliced mushrooms, drained
1 t. Italian seasoning
1 c. baking mix
1 c. milk
2 eggs
1 c. shredded mozzarella cheese

Brown sausage and mushrooms in a heavy skillet. Drain and stir in seasoning. In a bowl, mix together the baking mix, milk, and eggs. Spread the meat mixture in a greased pie place. Pour the dough over the meat. Bake at 400 deg for 25 minutes. Sprinkle with cheese and bake another 2 or 3 minutes.

*Lasagna Pie*
The kids love this one!

1 lb ground beef
1/2 c. spaghetti sauce
1/3 c. cottage cheese, drained
1/4 c. Parmesan cheese, grated
1 T. milk
1 c. mozzarella cheese, shredded
1/2 c. baking mix
1 c. milk
2 eggs

Brown beef in a heavy skillet. Drain. Stir in the spaghetti sauce. In a bowl, mix together the cottage cheese, Parmesan cheese, and 1 T. milk. Spread the beef in a greased pie plate. Top with large spoonfuls of the cheese mixture. In a bowl mix together the baking mix, the milk, and the eggs. Pour into the pie plate. Bake at 400 deg for 30 minutes. Top with the mozzarella cheese. Bake for 3 more minutes.

*Sausage and Apple Pie*
Great for a chilly fall evening.

1/2 lb bulk pork sausage
1 c. shredded cheese
2 apples, sliced
3/4 c. baking mix
3/4 c. milk
4 eggs

Brown sausage in a heavy skillet. Mix the sausage, cheese, and apples together and spread in a greased pie plate. In a bowl, mix together the baking mix, milk, and eggs. Pour into the plate. Bake at 325 deg for 45 minutes.
