Hot Potato DishesPotatoes have got to be one of the most perfect foods. Easy to grow, cheap in the market, full of vitamins and minerals, and filling. Dress them up for fancy dinners or keep them home-style for family dinners. They're great for dieters - as long as you're careful about toppings, a baked potato will keep you filled up for quite a while. No wonder we feed potatoes to our infants, our families, and our grandparents. Store potatoes in a dark, cool place. (Not the refrigerator!) Pretty potato bins are relatively easy to find, but you may be able to find a good place right in your kitchen. I have a nice, deep drawer for the purpose. But - if you find that your potatoes are starting to go green, pare the skin off before using. *Garlic & Rosemary Potatoes* Fancy mashed potatoes - very grown-up 3 lbs potatoes, cleaned and chopped 5 garlic cloves, peeled and chopped 1 tsp salt 2 T. rosemary 3 T. olive oil 1 t. pepper In a heavy saucepan, cover potatoes, garlic, salt, and 1 T. of rosemary with water. Bring to a boil and cook for 20 minutes. Drain the water away. Add the rest of the rosemary, the olive oil, and the pepper. Mash until the potato mixture is thick and fluffy. *Italian Crusted Potatoes* A change from the usual french fries 5 T. Dijon-style mustard ½ c. Italian salad dressing 6 potatoes, chopped (red-skinned works really well) Mix the mustard and salad dressing together in a covered bowl or plastic bag. Place the potatoes in the bowl and toss well. Remove the potatoes and place in a greased baking pan. Bake at 425 deg. for 35-40 minutes. *Hot German Style Potato Salad* How to use up extra baked potatoes 4 strips of bacon 2 lbs potatoes, baked or boiled ½ c. cider vinegar 1 red onion, chopped 2 green onions, chopped ½ c. parsley, chopped Fry the bacon in a heavy skillet. Crumble the bacon and set aside. Slice the potatoes and fry in the bacon grease. Remove the potatoes and sprinkle with vinegar. Fry the red onion in the bacon grease. Remove and toss with the potatoes. Add the bacon, green onions, and parsley. *Creamy Ham and Potatoes* Another great use for leftover baked potatoes 4 potatoes, baked and diced 1 can (10 oz) condensed cream of mushroom soup ½ c. skim milk 1 onion, chopped ½ lb of ham, diced Mix together all of the ingredients. Pour into a greased 1 ½ qt baking dish. Bake at 350 deg. for 30 minutes. *Cheesy Potato Soup*
