Hot and Spicy SoupsMarch certainly comes in like a lion in this neck of the woods. It's definitely time to crack out the hot and spicy soup recipes. All of these soup recipes make a hardy lunch or dinner soup, but they are not for the "gentle" palate. For those of you who think that the spicier the better, have a look at these. *Green Chile Stew* A New Mexico favorite. Seems like everyone has a secret family recipe. 20 chopped green chiles 2 lb. stew meat 2 T. oil 1 onion, chopped ¼ c. flour ½ t. salt ½ t. pepper 2 cans (16 oz) stewed tomatoes 2 lb. potatoes, cubed 2 c. beef broth Brown the stew meat in the oil. Add the onions and saute. Add the flour and brown. Add the green chiles and tomatoes and stir well. Add the rest of the ingredients and simmer for at least 30 minutes. *Green Chile and Corn Chowder* Very easy to make with canned ingredients 2 slices of bacon 1 onion, chopped 1 can (14 oz) cream style corn 1 can (14 oz) evaporated milk ½ c. water 1 can (4 oz) chopped green chiles dash of salt and pepper (or to taste) Brown the bacon in a heavy skillet. Remove the bacon and crumble. Brown the onion in the bacon grease. Stir in the corn, milk and water and stir until smooth. Add the green chiles, bacon, and salt and pepper. Heat to boil, then simmer for 10 minutes. *Gringo Bean Soup* Around here, a bowl of beef and beans in a spicy broth is known as gringo bean soup. In other parts of the nation, it may be called "Chili." 1 ½ lb. ground meat (half hamburger and half bulk sausage is very good) 2 cans (16 oz) pinto beans (or kidney beans, or whatever is on sale) 2 cans (16 oz) chopped tomatoes 2 1/2 t. cumin 1 t. paprika 3 ½ t. dried garlic 3 ½ t. onion powder 1 ½ t. salt 1 t. red pepper 4 T. chili pepper 1 T. flour ¼ c. water Brown the ground meat and stir in the rest of the ingredients. Make sure to blend the spices in well. Let simmer over low heat for 30 minutes. It tastes much better if you simmer for 1 hour, let it sit in the refrigerator overnight, then reheat it the next day. The spices blend and mellow a bit. Note: you can premix the spices and store in a resealable plastic bag. *Spicy Lentil Soup* If you are looking for another great source of fiber, try lentils. They are easy to prepare and inexpensive.
