Microwave Vegetable Dishes

Okay, perhaps microwaving is not the way my dear grandmother originally cooked, but microwaves are an important feature of kitchens everywhere - city, suburban, or rural. (And my wonderful grandmother, who is a rancher, sure uses the heck out of her microwave now!)

Microwave ovens are convenient, don't heat up the house in warm weather, frees up the stove, and the timer turns off the cooking at the right time. More than once have I burnt something on the stove because I had to run after an errant child/animal/electrical appliance.

These dishes are a great way to spice up plain 'ole veggies.

*Creamy Mushroom and Green Beans*

9 oz frozen French-style green beans 7 1/2 oz condensed cream of mushroom soup 1/4 c. sour cream 1/4 t. garlic salt 1 t. Worchestershire sauce 1/3 c. french fried onions

Cook green beans according to apckage directions and drain. In a 1 quart casserole, mix together beans with everything except the french fried onions. Cook uncovered for 4-6 minutes. Top with onions and cook for another 30 seconds.

*Cheesy Lima Beans*

10 oz. frozen lima beans 1/2 chopped onion 1 c. whole kernel corn 1/4 c. sour cream 1 T. flour 1/4 c. milk 1/2 c. shredded cheddar cheese 1/4 t. pepper 1/2 t. salt salsa (if desired)

In a 1 1/2 quart covered casserol, cook lima beans, onion and 1/4 c. water for 3 min. Add corn and cook covered for 7 min. Drain. Mix sour cream, flour, milk, and cheese. Mix into beans. Cook uncovered for 3 min. Stir well.

*Quick Baked Beans*

3 slices bacon 1 onion, chopped 31 oz can of pork and beans 1/4 c. catsup 2 T. molasses 1 T. mustard 1 t. Worchestershire sauce

Drain about half of the juices from the pork and beans. Chop the bacon and cook for 3 min. Reserve 1 T of the drippings. Remove the bacon. Cook the onion in the drippings for 2 min. Stir in the rest of the ingrediants and cook covered for 6-8 min. Top with the bacon.

*Cheesy Broccoli Bake*

16 oz frozen cut broccoli 7 1/2 oz condensed cream of mushroom soup 1/2 c. shredded cheddar cheese 2 T. milk 1 T. mayonnaise 2 T. crushed saltines

In a 1 1/2 quart casserole cook the broccoli according to directions on the package. Drain. Mix the soup, cheese, milk, mayonnaise, and stir into the broccoli. Top with crackers, cook uncovered for 5 minutes.

I'm on medical treatment that messes with my brain and I have caught my kitchen on fire a lot in the past year. So I now do almost everything I can in the microwave or crock pot.
