Family-Pleasing Sausage Recipes


Sausage is an amazing food: from very humble beginnings comes many delicious varieties. Traditionalists may enjoy breakfast patties, summer sausage, and polish sausage. If you're watching your diet, stores now carry healthier varieties, such as fat-free hot dogs and turkey kielbasa. Even vegetarians have a variety of amazingly good soy-based sausages. And kids seem to like them all. If you find a bargain, stock up. Sausage freezes very well.

These four recipes make terrific dinners or very hearty lunches. The Kielbasa and Sauce freezes well, the Hawaiian Dogs are good for leftovers, but the pineapple makes for mushy freezer food. The Sausage Nibblers can be frozen before you cook them. (Nice if you're planning a party.) The Potato and Kielbasa Frittata is best eaten fresh. Although teenage boys have been known to polish off leftovers the next morning.

*Potato and Kielbasa Frittata* This makes a good Sunday brunch meal as well.

1 c. red onion, sliced 2 T. red vinegar 3 potatoes, washed and cubed 1 c. chicken broth 8 large eggs ½ c. milk 2 T. parsley ¼ lb kielbasa, diced ¼ c. cheddar cheese, shredded

In an oven-proof skillet (cast-iron is perfect), mix together onion, vinegar, and 2 c. water. Cook for 20 minutes and then remove the onions. Add potatoes and chicken broth to the pan and cook 15 minutes. In a bowl mix together the eggs, milk, and parsley. Pour the eggs into the skillet and top with the onions and sausage. As the egg sets, lift it up slightly so the uncooked part runs into the pan. Cook until set in the middle, but still wet on top. Top with cheese and place in a 350 deg. oven for 8-12 minutes.

*Sausage Nibblers* A good appetizer and fun finger food.

2 lbs uncooked, ground sausage 4 ½ c. baking/biscuit mix 6 c. shredded cheddar cheese 1 onion, chopped 1 celery rib, chopped 2 T. parsley 1 clove of garlic, chopped

Mix all of the ingredients together and form into 1 in. balls. Bake in a 375 deg oven for 15 minutes on an ungreased cookie sheet.

*Hawaiian Dogs* Kids seem to like these fancy hot dogs.

4 bacon strips, cooked and diced 1 onion, chopped 1 green pepper, chopped 1 rib celery, chopped 2 cloves of garlic, minced 1 can (16 ounces) of pineapple chunks and juice ¾ c. chili sauce 1 lb hot dogs, chopped 5 c. cooked rice

In a heavy skillet sauté the onion, pepper, celery, and garlic in a little bacon grease. Add the pineapple chunks and juice and chili sauce and bring to a boil. Add the hot dogs and heat through. Serve over rice.
