'Tis the season, folks! And one of my favorite foods of the holiday are homemade candies. They're fun to do, fairly quick (important during this hectic time) and make wonderful gifts as well. Older kids can easily make these candies, with supervision of course. But because of the possibly of burns with the hot sugar, little ones should probably just help with bonbons and making pretty plates of candies to give away. And to sample the end product, of course!
14 oz of sweetened condensed milk 12 oz of semisweet chocolate chips 1 t. vanilla 1 c. chopped nuts 3 oz miniature marshmallows Mix together the milk, chips, and vanilla in a saucepan over low heat until the chocolate is melted and the mixture is smooth. Pour the fudge into a buttered 8X8X2 pan and chill for 30 minutes. Top with the nuts and marshmallows and chill until firm. Cut into 1 inch squares. *Old Fashioned Divinity* 2 2/3 c. sugar 2/3 c. corn syrup 1/2 c. water 2 egg whites 1 t. vanilla 1/2 c. chopped nuts Mix together the sugar, syrup, and water in a saucepan over low heat until the sugar is melted. Beat the egg whites until they stand in firm peaks. Slowly pour in the syrup mixture while continuing to beat the egg whites. Fold in the nuts. Drop the divinity from a buttered spoon onto a wax paper. Let stand until firm. *Chocolate Caramels* 2 c. sugar 1/2 c. butter 2 c. cream 3/4 c. light corn syrup 2 oz chocolate 1/2 c. chopped pecans Heat sugar, butter, 1 c. cream, corn syrup, and the chocolate in a saucepan over medium heat until boil. Keep stirring. Add the other cup of cream. Keep stirring. Head until firm ball stage (about 245 deg on the candy themometer) Pour the nuts into a buttered 8X8X2 pan. Quickly pour the hot candy mix into the pan over the nuts. Cool. Cut into 1 inch squares. *Bonbons* A traditional favorite 4 c. powdered sugar 2/3 c. condensed milk 3/4 t. almond extract candied fruit or nuts Mix together the sugar, milk, and almond extract. Knead the candy until smooth. Form the candy into 1 inch balls. Press a piece of fruit or nut into the center of the balls. Let the bonbons stand until firm. Happy holidays! Go To Page: 1
