Fried and Fattening!


Sometimes we get so caught up in watching our fat, limiting our sugar, and increasing our fiber intake that we forget that it's perfectly alright to indulge a little in high fat, delicious goodies. If these treats are part of a normally healthy diet, you will not even see them register on the scale or on your arteries.

Enjoy your life. Eat moderately and well. And an occasional homemade donut or fritter will simply make your day a little nicer.

Fried Sweets Desserts first? Why not? It's a little sinful....but oh so good!

*Homemade Donuts* These are fantastic when still a little hot from the oil

Vegetable oil 3 1/3 c. flour 1 c. sugar 3/4 c. milk 2 T. shortening 3 t. baking powder 1/2 t. salt 1/2 t. allspice 2 eggs Topping (powdered sugar, sugar&cinnamon, glaze, etc.)

Heat 2-3 inches of oil in your heavy deep fryer to 375 deg. Beat all of the rest of the ingrediants (except the topping) with an electric mixer. Roll the dough out to about 3/8 inch thick. A heavily floured surface helps. Cut out the donuts with either a donut cutter or with a glass and a wooden spoon handle to punch the holes. Cook the donuts in the hot oil for about 1 to 1 1/2 minutes per side. Drain. While they are delicious plain, you can also glaze them or put them one at a time in a bag with either powdered sugar or sugar & cinnamon.

*Apple Fritters* This will will up an empty tummy in a hurry. Wonderful on cold mornings.

Vegetable oil 1 c. flour 1/2 c. milk 1 t. baking powder 1 t. salt 1 t. vegetable oil 2 eggs 1/2 t cinnamon 1/2 t. nutmeg 1 c. chopped apples (tart is best)

Heat 2-3 inches of the vegetable oil in a heavy deep fryer. Mix the rest of the ingrediants together. Drop by the tablespoon into the hot oil and cook for about 5 minutes. Drain well. Bananas and chopped pineapple also work well in this recipe.

Main Dishes This is pure comfort food.

*Fried Chicken* Simple and delicious

Vegetable oil 1/2 c. flour 1 t. salt 1 t. ground red pepper 1/2 t. ground black pepper 3 lb chicken, cut into pieces

Heat 1/4 inch of oil in your heavy deep fryer. (Boy, your fryer is getting a workout, isn't it?) Mix together the flour, salt, and pepper. (Some folks like a little cumin in there too) Coat the chicken pieces with the flour mixture. Fry chicken in oil until lightly borown on all sides (about 10 minutes) then cover and simmer for about 30 minutes more.
