Back to school time- now how about something other than pb&j? Even if you're pressed for time, a bagged lunch can be delicious and good-for-you. Relying on over-processed store-bought food for your lunches can be expensive though. Why not whip up some of these easy dishes? Make up a week's worth on Sunday and relax for the rest of the week.
Chicken and Rice Salad Ingrediants: 1 c. rice (uncooked) 2 pieces of chicken (thighs, breasts, etc.) Italian dressing Misc. chopped veggies (olives, bell pepper, etc.) Collect: 2 saucepans with lids. Directions: Place the chicken in one pot and cover with water. Bring to a boil then simmer for 35 minutes. Bring the rice and 2 c. of water to a boil then cover and simmer for 20-25 min. Let the chicken cool then dice. Add chicken and veggies to the rice. Stir in enough Italian dressing to moisten well. Turkey Roll-Ups Ingrediants: Turkey breast Tortillas Bean sprouts Deli Mustard (guacamole is great too) Directions: Place the breast in a shallow roasting pan. Brush with melted butter or oil. Roast in a 325 deg. oven for 2 hours. (Follow directions on the turkey). Cool and slice. Spread either mustard or guacamole on the tortillas. Lay a few slices of turkey in the middle of the tortilla and top with sprouts. Fold up one side of the tortilla about 1-2 inches, then roll up starting on an adjoining side. Trail-Mix Bars Ingrediants: 1/4 c. shortening 1 c. brown sugar 1 egg 3/4 c. flour 1 c. trail-mix 1 t. baking powder .5 t. salt Melt shortening, stir in the rest of the ingrediants. Spread in a greased 8X8X2 pan. Bake in 350 deg. oven for 25 min. Cut into squares while still warm. Fried Chicken A favorite around here. Ingrediants Chicken fryer, cut into pieces Flour Salt & pepper Seasoning (cumin, paprika, your favorite) Veg. oil. Mix flour and seasoning. Dip the chicken in the flour to cover. Heat about .25 inch of oil in a skillet. Brown the chicken in the hot oil. Cover the skillet and simmer the chicken for about 35 minutes. Delicious hot or cold. Apple & Cocoa Brownies 1 c. sugar 1/2 c. butter 2 eggs 3/4 c. flour 1/2 c. cocoa 1/2 t. baking power 1/2 t. salt 2 tart apples, pared and chopped Mix together sugar, butter, and eggs. Stir in the rest of the ingrediants. Spread in a greased 8 X 8 X 2 inch pan. Bake in 350 deg. oven for 25-30 minutes. Cool and cut into squares.
