Don't Throw Away Old Bread!Old bread, stale biscuits, the crumbly heels of last week's loaf, these are the humble beginnings of wonderful comfort food. As long as they aren't moldly, chuck them into a bag and toss them into the freezer until you have enough for one of these family pleasing recipes. Grandma's Bread Pudding One morning we were stumped for a quick breakfast. The little ones wanted leftover bread pudding. Hey, why not? It's all good, solid food. Use any kind of bread for this pudding. One memorable, tasty pudding used whole wheat heels, stale biscuits, and half a cinnamon roll. Ingrediants 2 c. milk .25 c. butter or margarine 2 eggs, beaten .5 c. sugar 2 t. cinnamon .25 t. salt 6 c. leftover bread, torn into small cubes .5 c. raisins Collect: large saucepan, large spoon, bowl, 1.5 quart casserole, large pan. Heat oven to 350. Heat butter and milk in the saucepan until butter in melted. In your bowl, mix together the eggs, sugar, cinnamon, salt. Add your bread and raisins to the bowl. Mix in the butter and milk. Pour everything into the ungreased casserole. Pour about an inch of hot water into your large pan and place your casserole in the pan. Put the casserole and pan in your oven and cook for about 40 minutes (or until a knife comes out clean.) Tasty warm, cold, or reheated. Additions: Try adding one or more of these spices to your batter: 1 t. allspice, .25 t. nutmeg, a dash of ginger Add a diced up apple or dried fruit to your batter. Casserole Vegetable Stuffing So many of us limit stuffing to just Thanksgiving. But stuffing is an easy, delicious dish, even if you don't have a bird to stuff. This is also a great way of using up hard corn bread. Ingrediants: 4.5 c. chopped vegetables (good ideas: celery, carrots, onion, broccoli stems, green pepper, etc.) .75 c. butter or margarine 9 c. torn up bread 1 t. salt .5 t. ground sage .5 t. dried tyme .25 t. pepper 1 T. lemon juice Collect: 2 quart casserole (ungreased), small saucepan Melt the butter in a small saucepan. Put everything else in the casserole and toss well. Pour the butter into the casserole and mix. Cover and cook in a 375 deg. oven for about 30 minutes. Easy Lost Bread (French Toast) Don't limit yourself to just slices of sandwich bread. I've used carefully sliced biscuits as well. And you've got to try English muffins - they take a little longer to cook, but oh my! Method: For every cup of milk, beat in 2 eggs. Heat up a skillet and add just enough oil to keep it slick. Briefly soak a slice of bread in your milk/egg mixture and toss it on the skillet. Brown both sides. Serve with syrup, jelly, powdered sugar, and butter.
