  • 1 1/2 t. salt
  • 1 t. red pepper
  • 15 1/2 t. chili pepper
  • Mix together and store in a plastic bag. Add more red pepper for a spicier chili, less for a milder version.

    Thrifty Chili:

    • 1 pot of cooked beans
    • 1 recipe of chili spice mix
    • 1 onion
    • 1 can of tomato sauce
    • up to 2 lbs of your favorite ground meat (sausage, hamburger, etc.)

Heat up your beans on the stove. Chop the onion. Brown the meat in a pan, add the meat to the beans when it finishes cooking. Brown the onions in the leftover grease in the pan. Add the onions to the beans. Pour in the tomato sauce and stir in the chili spice mix. Simmer for at least 20 minutes. Ready to serve or for even better flavor, let it sit in the fridge overnight.

Recipe Three: What To Do with the Bean Broth

Now that you've used up all your beans, here’s what to do with that rich, brown broth.

Ingredients: your broth, cut up veggies, a grain (barley, corn, hominy, etc.), any leftover beans, a tomato product (sauce, ketchup, salsa, etc), salt and pepper

Heat the broth, toss in the veggies, grain, beans, and tomato product, and season with salt and pepper. Cook for at least 20 minutes or until grain is cooked. Pasta is also a nice addition.

That's a great idea - my family saw beans served that way in the Sonora part of Mexico. Very tasty and easy to prepare.
