Potatoes- Meals for 50 Cents or Less

It's a week before payday and you're darn close to flat broke. Little beads of sweat are breaking out because you've got to find a way to feed your family. Well look under the sofa cushions for loose change and get to the grocery store. Buy the biggest bag of potatoes that you can afford. They are meals in themselves and if you have *anything* at all in the pantry, then you've got a party.

Now the thrifty country cook doesn't worry too much about exact cups of this or teaspoons of that. Country cooks around the nation have started a meal for four and as folks came by to visit, ended up making a meal for fourteen. But it all came out darn tasty. So relax a little. If you're short on milk, add a little water. Gravy is a great substitute for anything, and remember potatoes are a meal within themselves!

Fried Potato Hash For the Cook Who Has Better Things To Do 1 potato per person 1 onion for every 3 or 4 potatoes A little oil (bacon grease, olive oil, it doesn't matter) A skillet with a lid (important!)

Chop up the potatoes into roughly half inch pieces. Heat up your dry skillet. Quickly chop up the onion(s). When the skillet is hot, add your oil. Brown the onion and potatoes. Add a little salt and pepper. Turn the heat *way down.* Cover the skillet with the lid. Now go do whatever you need to do. The hash will steam and cook by itself. It should be done in 45 min to an hour.

Delicious with salsa, ketchup, applesauce, or sour cream

Mashed Potatoes Please Don't Buy Flakes! 1 or 2 potatoes per person water If you have it: milk, butter, cheese, broth, etc. Large pot

Make extra mashed potatoes for potato pancakes! Fill your large pot about halfway with water. Add some broth if you have it. Quarter the potatoes. Now leave on those skins - the fiber and vitamins are good for you and your kids. Dump in the potatoes and boil until good and soft. Drain most of the water out. Mash with whatever is handy; a potato masher is terrific, but if you don't have one, grab a big spoon and a fork. Whatever you do - don't use an electric mixer. Chef Price made potato wallpaper paste that way once. If you have it, add a little milk and/or butter, cheese, etc.
