Next comes our more recent discovery in my life that would be Stevia. Stevia has also been mentioned in our discussions here on the board. There is a lot more to know about Stevia than the fact that it is a sugar substitute. Get a load of this guys I have a bunch of it in my cupboard. I can only say, WHOAH what a substitute! If you are going to use this stuff use it sparingly it is some strong stuff. When I first found it in my local bulk store I thought “Oh cool!” When I tried to make my first gallon of tea with it my reaction was “Oh YUCK!” While at the store I had purchased the powdered form I now regret that. However, as a substitute I have not given up on it. Although Stevia Rebaudiana is not cheap to purchase and not available everywhere it still has a world of possibilities we should examine. Perhaps though I should go back to the very beginning and explain some of the history of this plant. This wild plant grows and thrives from Argentina to Mexico. It is to say the least prolific and now the natives of this area are exporting it to us. The Japanese originally used this plant as a sweetener in their tea. Personally I actually enjoy the stuff in my tea when making it by the cup. Stevia lends a soft spice flavor to your drinks not unlike cinnamon. However if you are using the powdered form in larger batches of drinks you find the Stevia can be over powering and change the color of the beverage to a sick green. So maybe the powdered form is a bad idea. Unfortunately the liquid form can be more expensive. The fact is however I have yet to try the liquid form. I feel confident however my experience with the powdered form will be much more pleasant. The literature being supplied about this plant talks of “no calories” and the fact it is safe for diabetics. Wait a minute, I won’t say that personally. Remember before you try some of the oddball things I come up with check with the American Diabetic Foundation, your doctor, pharmacist and nutritionist if possible. After all Diabetes is nothing to be played with. I haven’t gotten to bake with this plant yet. To be honest using the cheaper powdered form in
