DINING WITH FRUIT

As we all know, Autumn is here and, to be really honest with all of you, I miss Summer. Some may not agree with me but those lazy days of Summer are some of my favorite times of the year.

One thing that I try to do is to serve, from time to time, some dishes that bring back memories of those days of Summer.

So, this week, I thought I'd share some of those side dishes with you.

Let's get cooking! <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

DOWN HOME FRUIT SALAD

1/2 Small Seedless Watermelon (Peeled and Cubed)

1 Cantaloupe (Peeled, Seeded and Cubed)

1 Can Pineapple Chunks (Drained)

4-5 Ripe Bananas (Peeled and Cubed)

1 Pint Strawberries (Hulled and Cut in Half)

3-4 Oranges (Peeled, Seeded and Chunked)

2 Apples (Peeled, Cored and Chunked)

1/2 Cup Sugar

In a large bowl, combine all the Fruit and mix well. Add the Sugar and combine well. Refrigerate for at least 2 hours before serving. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

FRUIT MEDLEY

1 Cantaloupe (Peeled, Seeded, and Chunked)

1 Can Pineapple Chunks (Drained)

12-15 Maraschino Cherries (Cut in Quarters)

2-3 Drops Peppermint Extract

Fresh Mint Sprigs (If available for garnish)

In a large bowl, combine the Cantaloupe, Cherries and the Peppermint Extract and toss to combine. Refrigerate for a couple of hours before serving. Garnish with the Mint Sprigs. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

RASPBERRY COLESLAW

2 Cups Red Cabbage (Shredded)

2 Cups White Cabbage (Shredded)

2 Cups Seedless Green or Red Grapes (Cut in Half)

1 Medium Red Onion (Peeled and Chopped)

1/2 Cup Fresh Parsley (Chopped)

1/2 Cup Vegetable Oil

1/4 Cup Raspberry Vinegar

3 Tablespoons Pure Maple Syrup

1/4 Cup Sugar

1 teaspoon Sugar

1 teaspoon Salt

1 teaspoon Black Pepper (Freshly Ground if Possible)

1 Cup Fresh or Frozen Raspberries

In a large bowl, combine the Cabbage, Onion, Grapes and Parsley. Toss to combine and mix well. In another bowl, combine the remaining ingredients--except the Raspberries--and whisk until completely blended. Pour this mixture over the Cabbage mixture and toss until completely coated with the dressing. Refrigerate for at least 2 hours before serving. When serving, garnish with a generous helping of Raspberries. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

So, when you're wishing that those wonderful days of Summer would return, give one of the above recipes a try. You'll find that they'll help ease the pain of swinging a snow shovel and bring back some great memories of days gone by.
