Sunday is Mother's Day and, this week, I'll share some recipes for this special day. All are simple and quick, yet all make for some great eating. Give them a try and you'll see what I mean. FRENCH TOAST FOR MOM 1 Sourdough Baguette (Day Old Works Best) 4 Eggs 1/2 Cup Vanilla Ice Cream 1/2 teaspoon Nutmeg 1 Tablespoon Cinnamon 1 Tablespoon Vanilla Extract 1/4 Cup Orange Juice (Freshly Squeezed) Fresh Fruit (Your Choice, For Garnish) In a large bowl, combine the Eggs, Vanilla Ice Cream, Nutmeg, Cinnamon, Vanilla Extract and the Orange Juice. Mix completely until the mixture becomes a smooth batter. Slice the Day Old Baguette into slices about 1 ½ inches thick. Slice on a slight diagonal to create oval shaped slices. Dip each Bread slice into the Batter, being sure to coat each side evenly. Using a lightly buttered skillet or griddle--using medium heat--cook each slice until it is golden brown. Arrange 3 slices, slightly overlapping each slice and garnish with your choice of Fresh Fruit and serve with warm Maple Syrup. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< DRUNKEN SHRIMP 2-3 Pounds LARGE Fresh Shrimp MARINADE INGREDIENTS 1 Cup Olive Oil 1/2 Cup Bourbon Whiskey 1 Teaspoon Salt 2-4 Cloves Garlic (Peeled and Minced) 1 Tablespoon Prepared Horseradish 1 Tablespoon Brown Mustard 1/3 Cup Chili Sauce 2 Tablespoons Worcestershire Sauce 1/2 teaspoon Tabasco Sauce (Or Other Hot Sauce) 1 Tablespoon Crushed Basil Wooden Skewers (As Needed, Soaked in Water) Fresh Vegetables (Your Choice, As Needed) Clean (Shell and Devein) the Shrimp, leaving the tails attached. In a large bowl, combine all the Marinade Ingredients and mix well. Add the Shrimp to the Marinade and allow to marinate for at least 3-6 Hours. Skewer the Shrimp on the wooden skewers, alternating with Cherry Tomatoes, Bell Pepper Slices, Mushrooms or other Fresh Vegetables and grill for about 3 minutes per side over very hot coals. NOTE: If you don't want to fire up the Bar-B-Q, you can use a very hot griddle to grill the Shrimp. Use the Marinade Sauce for dipping the Shrimp. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< If you should be planning to serve Mom a "really good steak" for Mother's Day, be sure to give the following Marinade a try. KENTUCKY MARINADE 10-12 Tablespoons Bourbon 5 Tablespoons Soy Sauce 2 Tablespoons Red Cider Vinegar 2 Tablespoons Cooking Oil 1/2 teaspoon Lemon Pepper 1/4 teaspoon Black Pepper 1/4 teaspoon Salt 1 teaspoon Garlic Powder (Or 2 Cloves Garlic, Crushed) In a large bowl, combine all the ingredients and mix completely. Marinate the Steaks for a minimum of 2 hours (The Longer The Better). For best taste, grill over hot coal on an outdoor grill. NOTE: The smell of the grilling steaks will drive your neighbors out of the mind with envy.
