COLD WEATHER GOODIES

Since 'Ole Man Winter is still hanging on over most of the country, we all like to have a nice warm meal on these cold evenings. However, we don't need to work very hard to have just such a meal. The following recipes are not only easy, but they are really great on a cold Winter's evening.

CHICKEN FRIED STEAK

2 Pounds Round Steak (Tenderized)

Salt and Pepper To Taste

1 1/2 Cups Flour

1 Cup Milk

3-4 Tablespoons Cooking Oil

1/2 Cup Margarine

Cut the Round Steak into serving sized pieces. Dip Steak pieces in milk and coat with flour. Heat the Cooking Oil in a large skillet and Fry the Steak for about 2-3 minutes per side. Keep the Steak warm while preparing the Gravy. Add the Margarine to the Pan Drippings and slowly--a bit at a time--add Milk and Flour, stirring constantly until the Gravy begins to thicken. Serve the Steak with your favorite vegetable. Serve the Gravy by pouring over the Steak Pieces. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

MAC AND BEEF

1 Pound Lean Ground Beef

1 Medium Yellow Onion (Chopped)

2 Cloves Garlic (Minced)

1 tablespoon Paprika

Salt and Pepper (To Taste)

1 Small Can Sweet Peas (Drained)

1 Small Can Whole Kernel Corn (Drained)

1 Large Can Stewed Tomatoes (Chopped)

1 Package Macaroni and Cheese Dinner

Prepare the Macaroni and Cheese according to package directions and set aside. In a large skillet, brown the Ground Beef and add the Chopped Onion and Stewed Tomatoes. Simmer until the Onion is tender. Add the Whole Kernel Corn, Tomatoes and Peas and stir to mix well. Simmer until the mixture is well heated. In a large bowl, combine the Macaroni and Cheese with the Beef mixture and stir to combine. Serve with Hot Garlic Bread. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

NOT SO SLOPPY JOES

4-5 Stalks Celery (Chopped)

1 Large Green Bell Pepper (Seeded and Chopped)

1 Large Yellow Onion (Chopped)

2 Tablespoons Cooking Oil

2 Pounds Lean Ground Beef

1/4 Cup Brown Sugar (Lightly Packed)

2 teaspoons Dry Mustard

Chili Powder (To Taste)

1 1/4 Cups Catsup

1 Cup Beef Broth

1 teaspoon Vinegar

1/4 teaspoon Salt

1/8 teaspoon Black Pepper

Hamburger Buns (As Needed)

Add Cooking Oil to a large skillet and heat. Add the chopped Celery, Onion, and Bell Pepper and cook until the vegetables are barely tender. Stir constantly to prevent burning. Add the Ground Beef and cook until the Beef is browned. Stir well while cooking to break up the Beef. Drain off any excess grease and add the Brown Sugar, Dry Mustard, Chili Powder, Catsup, Beef Broth and Vinegar. Stir to combine all ingredients. Cover and simmer for 20-30 minutes. Season to taste with the Salt and Pepper. Serve over open face Hamburger Buns. Garnish with Tomato Slices and Dill Pickles, if desired.
