All right, this 'ole guy isn't really that dumb. I know darn well that you ladies aren't going to be able to resist looking. But the truth is, this week's column is really meant for the fellers in your life. So, if you can, stop reading right now, go get the man in your life and set him down in front of the 'puter and tell him to start reading.

O.K. guys, now that the ladies are gone let's get down to business. It's only about a week and one-half until VALENTINE'S DAY and that means that it's time to do something special for our ladies. After all, most of the year they're the ones out in the kitchen fixin' all those good things that we like to eat. Now it's our turn.

Since Valentine's Day usually means chocolate of some kind or other I'll give you a few special dessert recipes that will allow you to really knock her socks off. All of the following recipes use chocolate and are easy enough for the complete novice to prepare. You don't really have to be a chef to WOW her with something special.

Take a little time and surprise her with one of these desserts and I'm sure that she'll love you for doing so.

Next week, I'll share a few great main-dish recipes to complete your special surprise for her.

SURPRISE CAKE

12 az. package cream cheese (softened)

1/4 cup sugar

1 egg

1/2 teaspoon vanilla

1 package dark chocolate cake mix

1/2 cup semi-sweet chocolate chips

In a mixing bowl, beat the cream cheese and sugar until the mixture is smooth. Add the egg and the vanilla and beat until completely blended. Set aside. Prepare the cake mix according to the directions and fold in the chocolate chips. grease and flour a 12 cup bundt pan and pour the cake batter into the pan. Coat the top with the cream cheese/sugar mixture. Be sure to coat it evenly. Bake in a pre-heated 350F oven for about 45-55 minutes or until a wooden toothpick inserted into the center of the cake comes out clean. Remove the cake from the pan and cool on a rack until completely cool. Dust the top with the confectioners or powdered sugar. Serve with whipped cream and top with raspberries or blackberries. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<

SWEETHEART PIE

1 9 inch prepared graham cracker pie crust

3/4 cup sugar

1 stick (½ cup) butter or margarine (softened)

3 oz. unsweetened baker's chocolate (melted and cooled)
